  • 2 carrots, diced
  • 2 celery stalks, diced

  • 6 cups vegetable broth

  • 1 teaspoon turmeric
  • 1/2 teaspoon black pepper
  • 1 teaspoon salt
  • 1 tablespoon lemon juice

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion, carrots, and celery; sauté until softened.
  3. Stir in the garlic, cumin, and turmeric; cook for another minute.
  4. Add the red lentils and vegetable broth; bring to a boil.
  5. Reduce heat and simmer for 20-25 minutes, until lentils are tender.
  6. Use an immersion blender to purée the soup to your desired consistency.
  7. Stir in the lemon juice and season with salt and pepper.
