Roasted Cauliflower and Mushrooms

  • 8 ounces mushrooms
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Trim and chop the cauliflower into florets, and slice the mushrooms.
  3. In a large bowl, combine cauliflower, mushrooms, olive oil, garlic powder, salt, and pepper. Toss until evenly coated.
  4. Spread the mixture in a single layer on a baking sheet.
  5. Roast in the preheated oven for 25-30 minutes, or until golden and tender, stirring halfway through.
  6. Serve warm.
