- 1 pound ground turkey
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 egg
- 2 tablespoons fresh sage, chopped
- 2 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup orzo pasta
- 1 cup pumpkin puree
- 2 cups chicken broth
- 1 tablespoon olive oil
- 1/4 teaspoon nutmeg
- Preheat oven to 400°F (200°C).
- In a bowl, mix ground turkey, breadcrumbs, Parmesan, egg, sage, garlic, salt, and pepper until combined.
- Form the mixture into meatballs and place them on a baking sheet.
- Bake for 20-25 minutes until cooked through.
- While meatballs are baking, heat olive oil in a pot over medium heat.
- Add orzo and toast for about 2 minutes.
- Stir in chicken broth and pumpkin puree, then season with nutmeg. Bring to a boil, then reduce heat and simmer until orzo is cooked.
- Serve meatballs over pumpkin orzo.
Notes
- Feel free to substitute Italian seasoning for sage.
