Sage Turkey Meatballs with Pumpkin Orzo

These Sage Turkey Meatballs are perfect for cozy dinners, served alongside delicious pumpkin orzo.

  • 1 pound ground turkey
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 tablespoons fresh sage, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup orzo pasta
  • 1 cup pumpkin puree
  • 2 cups chicken broth
  • 1 tablespoon olive oil
  • 1/4 teaspoon nutmeg

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, mix ground turkey, breadcrumbs, Parmesan, egg, sage, garlic, salt, and pepper until combined.
  3. Form the mixture into meatballs and place them on a baking sheet.
  4. Bake for 20-25 minutes until cooked through.
  5. While meatballs are baking, heat olive oil in a pot over medium heat.
  6. Add orzo and toast for about 2 minutes.
  7. Stir in chicken broth and pumpkin puree, then season with nutmeg. Bring to a boil, then reduce heat and simmer until orzo is cooked.
  8. Serve meatballs over pumpkin orzo.

Notes

  • Feel free to substitute Italian seasoning for sage.
  • Leftover meatballs can be stored in the refrigerator for up to 3 days.
