Ingredients

6 tortillas
1 pound ground beef
1 cup shredded cheese
1/2 cup diced onions
1/2 cup diced bell peppers
4 large eggs
1/2 cup milk
1 teaspoon taco seasoning
Salt to taste
Black pepper to taste
Instructions
Preheat the oven to 350°F (175°C).
In a skillet, cook the ground beef over medium heat until browned. Add onions, bell peppers, seasoning, salt, and pepper, and cook until vegetables are tender.
In a bowl, whisk together eggs and milk. Pour over the beef mixture in the skillet.
Stir gently and cook until eggs are set, about 4-5 minutes.
Place tortillas in a baking dish. Fill each with the egg and beef mixture.
Sprinkle cheese on top of each taco.
Bake in the preheated oven for about 15 minutes until the cheese is melted and bubbly.
Serve warm and enjoy!
