- 2 acorn squashes
- 1 cup cooked quinoa
- 1 cup black beans, rinsed and drained
- 1 cup corn, fresh or frozen
- 1 red bell pepper, diced
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 1 tablespoon olive oil
- 1/4 cup chopped fresh cilantro
- Preheat the oven to 400°F (200°C).
- Cut the acorn squashes in half and scoop out the seeds.
- Drizzle the inside of each squash with olive oil and season with salt and pepper.
- Place cut-side down on a baking sheet and roast for 25-30 minutes or until tender.
- In a skillet, heat olive oil over medium heat; add onion and bell pepper, cooking until softened.
- Add garlic, cumin, and paprika; cook for another minute until fragrant.
- Stir in quinoa, black beans, corn, and cilantro; mix well and heat through.
- Remove squashes from the oven; turn them cut-side up.
- Stuff each squash with the quinoa mixture, pressing it down lightly.
- Return to the oven and bake for an additional 10 minutes.
- Serve warm.

- For extra flavor, consider adding cheese on top before the second baking.
