  • 4 boneless, skinless chicken breasts
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 2 cups cooked rice
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup frozen peas

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent.
  2. Add the minced garlic and cook for another minute.
  3. Add the chicken breasts to the skillet, seasoning with paprika, salt, and pepper. Cook until browned on both sides.
  4. Pour in the chicken broth and bring to a simmer. Cover and cook for 15-20 minutes until the chicken is cooked through.
  5. Remove the chicken, shred it, and set aside. Stir in the heavy cream and frozen peas into the skillet.
  6. Return the shredded chicken to the skillet, mix well, and let it simmer for a few more minutes.
  7. Serve the creamy mixture over cooked rice.
