Slow Cooker Chicken Burrito Bowl

A simple and delicious slow cooker chicken burrito bowl recipe that is perfect for busy weeknights.

  • 1 pound boneless, skinless chicken breasts
  • 1 cup salsa
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups cooked rice for serving
  • 1 cup shredded cheese for topping
  • 1/2 cup sour cream for serving
  • 1 avocado, sliced for serving

Instructions

  1. Place chicken breasts in the slow cooker.
  2. Add salsa, black beans, corn, cumin, chili powder, garlic powder, onion powder, salt, and pepper.
  3. Stir to combine and cover the slow cooker.
  4. Cook on low for 6-7 hours or on high for 3-4 hours.
  5. Once cooked, shred the chicken in the slow cooker and mix it with the sauce.
  6. Serve over rice and top with cheese, sour cream, and avocado.

Notes

  • For extra flavor, add lime juice before serving.
  • You can use leftover chicken or rotisserie chicken to save time.
