Smothered Chicken and Rice

A comforting dish of chicken cooked to perfection, served over rice, and smothered in a rich and flavorful gravy.

  • 4 pieces bone-in chicken thighs
  • 2 cups long-grain white rice
  • 4 cups chicken broth
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. In a large skillet, heat olive oil over medium heat.
  2. Season the chicken thighs with smoked paprika, salt, and pepper.
  3. Brown the chicken thighs in the skillet for about 5 minutes on each side.
  4. Remove chicken and set aside. In the same skillet, sauté onion and garlic until translucent.
  5. Add the rice and stir for 2 minutes, allowing it to soak in the flavors.
  6. Pour in the chicken broth and bring to a boil.
  7. Return chicken thighs to the skillet, cover, and reduce heat to low.
  8. Simmer for 25-30 minutes until the rice is cooked and the chicken is tender.
  9. Garnish with fresh parsley before serving.

Notes

  • For added flavor, marinate the chicken in spices for a few hours before cooking.
  • Serve with a side of steamed vegetables for a complete meal.
