  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1 cup pumpkin puree
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/4 cup granulated sugar (for rolling)
  • 2 teaspoons ground cinnamon (for rolling)

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  3. In another bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy.
  4. Mix in pumpkin, egg, and vanilla until well combined.
  5. Gradually add dry ingredients to the wet mixture, mixing until just combined.
  6. In a small bowl, combine 1/4 cup sugar and 2 teaspoons cinnamon.
  7. Roll dough into balls, then coat in cinnamon sugar.
  8. Place on baking sheet and bake for 10-12 minutes.
  9. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

  • For softer cookies, do not overbake.
