  • 2 pounds sweet potatoes
  • 1 cup maple syrup
  • 1/2 cup brown sugar
  • 1/2 cup butter, melted
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 2 cups mini marshmallows

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Peel and boil sweet potatoes until tender, then mash.
  3. In a large bowl, combine mashed sweet potatoes, maple syrup, brown sugar, melted butter, vanilla, cinnamon, nutmeg, and salt.
  4. Pour the mixture into a baking dish and top with mini marshmallows.
  5. Bake for 25-30 minutes until the marshmallows are golden brown.
