  • 1 medium butternut squash
  • 1 large sweet potato
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 teaspoon ground cumin
  • 1/2 teaspoon cayenne pepper
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup coconut milk
  • 2 tablespoons lime juice

Instructions

  1. Peel and dice the butternut squash and sweet potato.
  2. In a large pot, heat olive oil over medium heat. Add the diced onion and garlic, sauté until softened.
  3. Add the squash, sweet potato, vegetable broth, cumin, cayenne, salt, and pepper to the pot. Bring to a boil, then reduce heat and simmer until vegetables are tender, about 20 minutes.
  4. Use an immersion blender to puree the soup until smooth. Stir in coconut milk and lime juice.
  5. Serve warm, garnished with fresh herbs if desired.

Notes

  • For a spicier soup, increase the amount of cayenne pepper.
