- 1 medium butternut squash
- 1 large sweet potato
- 1 tablespoon olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 1 teaspoon ground cumin
- 1/2 teaspoon cayenne pepper
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup coconut milk
- 2 tablespoons lime juice
- Peel and dice the butternut squash and sweet potato.
- In a large pot, heat olive oil over medium heat. Add the diced onion and garlic, sauté until softened.
- Add the squash, sweet potato, vegetable broth, cumin, cayenne, salt, and pepper to the pot. Bring to a boil, then reduce heat and simmer until vegetables are tender, about 20 minutes.
- Use an immersion blender to puree the soup until smooth. Stir in coconut milk and lime juice.

Notes
