St. Patrick’s Day Treat: Honey Pistachio Ricotta Stuffed Dates

A delicious and festive treat for St. Patrick’s Day.

Ingredients

  • 12 Medjool dates
  • 1 cup ricotta cheese
  • 1/2 cup shelled pistachios, chopped
  • 2 tablespoons honey
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Split the Medjool dates lengthwise and remove the pits.
  3. In a bowl, mix ricotta cheese, chopped pistachios, honey, vanilla extract, and salt.
  4. Stuff each date with the ricotta mixture.
  5. Place stuffed dates on a baking sheet and bake for 10 minutes.
  6. Serve warm as a festive treat.

Notes

  • For a nut-free version, use sunflower seeds instead of pistachios.
  • These can be served cold as well.
