- 1 ½ cups graham cracker crumbs
- ½ cup granulated sugar
- ½ cup unsalted butter, melted
- 2 packages (8 ounces each) cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- 1 cup fresh strawberries, diced
- Preheat the oven to 350°F (175°C). Grease a 9×13 inch baking dish.
- In a bowl, mix graham cracker crumbs, sugar, and melted butter. Press the mixture into the bottom of the prepared baking dish.
- In a separate bowl, beat the cream cheese until smooth. Add powdered sugar and vanilla, mixing well.
- Add the eggs one at a time, mixing after each addition.
- Fold in the diced strawberries gently.
- Pour the cream cheese mixture over the crust in the baking dish.
- Bake for 25-30 minutes or until set. Let it cool completely, then refrigerate for at least 2 hours before serving.
