Summer Corn Salad

A vibrant and delicious summer corn salad that’s perfect for picnics and barbecues.

Ingredients

  • 4 ears sweet corn
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon lime juice
  • Salt and pepper to taste

Instructions

  1. Start by boiling water in a large pot. Once boiling, add the corn and cook for about 5-7 minutes until tender.
  2. Remove the corn from the pot and let it cool before cutting the kernels off the cob.
  3. In a large bowl, combine the corn kernels, cherry tomatoes, cucumber, red onion, and cilantro.
  4. In a separate small bowl, whisk together the olive oil, lime juice, salt, and pepper.
  5. Pour the dressing over the salad and toss to combine.
  6. Serve immediately or refrigerate for later use.

Notes

  • This salad can be made a few hours in advance. Just wait to add the dressing until you’re ready to serve.
  • Add avocado for extra creaminess.
