Sweet Potato Breakfast with Eggs

A nutritious breakfast option combining sweet potatoes, eggs, and turkey bacon for a hearty start to your day.

Ingredients

  • 2 medium sweet potatoes
  • 4 large eggs
  • 4 ounces turkey bacon
  • 1 tablespoon olive oil
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Peel and dice the sweet potatoes into small cubes.
  2. In a skillet, heat olive oil over medium heat and add sweet potatoes.
  3. Cook until they are tender and slightly golden, about 10-15 minutes.
  4. In another pan, cook turkey bacon until crispy, then set aside.
  5. In the same pan, crack the eggs and cook to your desired level of doneness.
  6. To serve, divide the sweet potatoes amongst plates, top with cooked eggs and crumbled turkey bacon.

Notes

  • For added flavor, sprinkle with fresh herbs.
  • Feel free to substitute turkey bacon with regular bacon if preferred.
