  • 4 slices turkey bacon
  • 1 medium onion
  • 2 cloves garlic
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon black pepper
  • 1 tablespoon olive oil
  • Salt to taste

Instructions

  1. Cook turkey bacon in a large pot until crispy, then remove and set aside.
  2. In the same pot, add olive oil, onions, and garlic, sautéing until translucent.
  3. Add diced sweet potatoes and cook for a few minutes.
  4. Pour in vegetable broth and bring to a boil.
  5. Reduce heat and let simmer until potatoes are tender.
  6. Blend the chowder until smooth, then stir in cream, smoked paprika, and pepper.
