Sweet Potato Egg Breakfast Casserole

A delicious and nutritious breakfast casserole combining sweet potatoes, eggs, and turkey bacon.

Ingredients

  • 2 cups sweet potatoes, diced
  • 6 large eggs
  • 1 cup turkey bacon, cooked and crumbled
  • 1 cup milk
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 1 cup shredded cheese (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix the diced sweet potatoes with olive oil, garlic powder, onion powder, salt, and pepper.
  3. Spread the sweet potato mixture in a greased 9×13 inch baking dish.
  4. In another bowl, whisk together eggs and milk, then pour over the sweet potatoes.
  5. Sprinkle crumbled turkey bacon and cheese on top.
  6. Bake for 35-40 minutes until eggs are set and the top is golden.

Notes

  • Feel free to add more vegetables like spinach or bell peppers.
  • This casserole can be made ahead and stored in the refrigerator.
