A delicious and easy-to-make Taco Rice Bowl that features turkey bacon for a flavorful twist.

Ingredients

  • 1 cup white rice
  • 2 cups water
  • 4 slices turkey bacon
  • 1 pound ground turkey
  • 1 packet taco seasoning
  • 1 cup black beans, rinsed and drained
  • 1 cup corn, drained
  • 1 cup diced tomatoes
  • 1 cup shredded lettuce
  • 1/2 cup shredded cheese
  • 1/4 cup sour cream

Instructions

  1. Cook the rice in water according to package instructions.
  2. In a skillet, cook the turkey bacon until crispy, then chop and set aside.
  3. In the same skillet, brown the ground turkey and add taco seasoning.
  4. Add black beans, corn, and diced tomatoes to the turkey mixture and heat through.
  5. Assemble the bowl by layering rice, turkey mixture, lettuce, cheese, and a dollop of sour cream.
  6. Top with chopped turkey bacon.
