  • 12 ounces cheese tortellini
  • 1 cup cherry tomatoes, halved
  • 1 zucchini, diced
  • 1 bell pepper, chopped
  • 2 tablespoons olive oil
  • 1 teaspoon garlic, minced
  • Salt and pepper to taste
  • ¼ cup fresh basil, chopped

Instructions

  1. Boil water in a large pot and cook the tortellini according to package instructions.
  2. In a skillet, heat olive oil over medium heat and sauté garlic until fragrant.
  3. Add zucchini and bell pepper, cooking until slightly tender.
  4. Stir in cherry tomatoes and cook for another 3-4 minutes.
