Twice Baked Loaded Breakfast Potatoes

  • 4 large russet potatoes
  • 6 slices turkey bacon
  • 1 cup shredded cheese
  • 1/2 cup sour cream
  • 1/4 cup green onions, chopped
  • 1 teaspoon garlic powder
  • Salt to taste
  • Black pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and pierce the potatoes with a fork, then bake for about 1 hour.
  3. Cook turkey bacon until crispy, then chop.
  4. Remove potatoes from oven, cut in half, and scoop out the insides into a bowl.
  5. Mix potato insides with cheese, sour cream, garlic powder, bacon, and seasoning.
  6. Refill potato skins with the mixture and top with extra cheese.
  7. Bake for an additional 20 minutes until heated through and cheese is melted.
  8. Garnish with green onions before serving.

Notes

  • Feel free to substitute regular bacon for turkey bacon if desired.
  • These potatoes can be made vegetarian by omitting the bacon.
