Vegan Blueberry Muffins

Ingredients

  • 1 cup blueberries
  • ½ cup almond milk
  • ⅓ cup coconut oil, melted
  • ¾ cup maple syrup
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix the wet ingredients together.
  3. In another bowl, combine the dry ingredients.
  4. Gradually add the dry mixture to the wet mixture and stir until just combined.
  5. Fold in the blueberries gently.
  6. Pour the batter into muffin tins and bake for 20-25 minutes.
  7. Allow to cool before serving.

Notes
