- 1 cup all-purpose flour
- 1/2 cup almond milk
- 1/4 cup maple syrup
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 cup fresh blueberries
- 2 tbsp coconut oil, melted
- Preheat your oven to 350°F (175°C) and line a muffin tin with liners.
- In a large bowl, mix the dry ingredients: flour, baking powder, baking soda, and salt.
- In another bowl, combine the wet ingredients: almond milk, maple syrup, and melted coconut oil.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Gently fold in the blueberries.
- Scoop the batter into the muffin tin, filling each cup about 3/4 of the way full.
- Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
- Let cool for a few minutes before transferring to a wire rack.
Notes
