Vegan Blueberry Muffins

These vegan blueberry muffins are a perfect guilt-free treat, combining delicious flavors with healthy ingredients.

  • 1 cup all-purpose flour
  • 1/2 cup almond milk
  • 1/4 cup maple syrup
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 cup fresh blueberries
  • 2 tbsp coconut oil, melted

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with liners.
  2. In a large bowl, mix the dry ingredients: flour, baking powder, baking soda, and salt.
  3. In another bowl, combine the wet ingredients: almond milk, maple syrup, and melted coconut oil.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Gently fold in the blueberries.
  5. Scoop the batter into the muffin tin, filling each cup about 3/4 of the way full.
  6. Bake for 20-25 minutes or until a toothpick inserted in the center comes out clean.
  7. Let cool for a few minutes before transferring to a wire rack.

Notes

  • For an added touch, sprinkle some oats on top before baking.
  • These muffins can be frozen for up to 3 months.
