Vegan Lemon Lentil Soup with Turmeric

  • 4 cups vegetable broth
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 teaspoon turmeric powder
  • 1 lemon, juiced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion, carrots, and celery, and sauté for about 5 minutes until softened.
  2. Add garlic and turmeric, sauté for another minute until fragrant.
  3. Pour in the vegetable broth and add the lentils, salt, and black pepper. Bring to a boil.
  4. Reduce heat to low, cover, and simmer for 25-30 minutes until lentils are tender.
  5. Stir in lemon juice before serving.
