White Chicken Chili

A hearty and comforting white chicken chili recipe that brings the family together.

Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cans white beans, rinsed and drained
  • 1 can diced green chilies
  • 4 cups chicken broth
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add chopped onion and sauté until translucent.
  3. Add minced garlic and cook for another minute.
  4. Add chicken breasts and cook until browned on all sides.
  5. Stir in the green chilies, white beans, chicken broth, cumin, and paprika.
  6. Bring to a boil, then reduce heat and simmer for 30 minutes.
  7. Remove chicken, shred it, and return to the pot.
  8. Season with salt and pepper to taste.

Notes

  • Serve with sour cream and cilantro on top for added flavor.
