White Chocolate Mousse

  • 8 ounces white chocolate, chopped
  • 2 cups heavy cream, divided
  • 1 teaspoon vanilla extract
  • 3 large egg whites
  • 1/4 cup granulated sugar

Instructions

  1. In a heatproof bowl, melt the white chocolate over a double boiler, stirring until smooth. Remove from heat and let cool slightly.
  2. In a separate bowl, whip 1 cup of heavy cream with vanilla extract until soft peaks form.
  3. In another bowl, beat egg whites until soft peaks form, then gradually add sugar, beating until stiff peaks form.
  4. Gently fold the melted chocolate into the whipped cream, then fold in the egg whites until no streaks remain.
  5. Pour the mousse into serving glasses and refrigerate for at least 2 hours before serving.
