- 2 boneless, skinless chicken breasts
- 1 tablespoon Cajun seasoning
- 8 ounces fettuccine pasta
- 1 tablespoon olive oil
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 onion, sliced
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley for garnish
- Cook fettuccine according to package instructions; drain and set aside.
- Season the chicken breasts with Cajun seasoning.
- In a large skillet, heat olive oil over medium heat and cook the chicken until golden and cooked through. Remove from skillet and slice.
- In the same skillet, add bell peppers and onion; sauté until tender.
- Add garlic and cook for another minute.
- Pour in heavy cream, bring to a simmer, and stir in Parmesan cheese until melted.
- Toss in the cooked fettuccine and sliced chicken.
- Season with salt and pepper, and garnish with parsley before serving.
