Cajun Chicken Pasta

A delicious and easy recipe for Cajun chicken pasta that brings the flavors of the South to your weeknight dinner.

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon Cajun seasoning
  • 8 ounces fettuccine pasta
  • 1 tablespoon olive oil
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Cook fettuccine according to package instructions; drain and set aside.
  2. Season the chicken breasts with Cajun seasoning.
  3. In a large skillet, heat olive oil over medium heat and cook the chicken until golden and cooked through. Remove from skillet and slice.
  4. In the same skillet, add bell peppers and onion; sauté until tender.
  5. Add garlic and cook for another minute.
  6. Pour in heavy cream, bring to a simmer, and stir in Parmesan cheese until melted.
  7. Toss in the cooked fettuccine and sliced chicken.
  8. Season with salt and pepper, and garnish with parsley before serving.

Notes

  • This dish can be made in under 30 minutes, making it perfect for a busy weeknight.
  • Feel free to adjust the spice level by adding more or less Cajun seasoning.
