Classic Lentil Soup

A delightful and comforting classic lentil soup recipe featuring turkey bacon.

Ingredients

  • 1 cup lentils
  • 4 slices turkey bacon
  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cups vegetable broth
  • 2 cloves garlic, minced
  • 1 teaspoon thyme
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook the turkey bacon until crispy, then remove and chop.
  2. Sauté onions, carrots, and celery in the bacon drippings until softened.
  3. Add garlic and cook for 1 minute.
  4. Stir in lentils, broth, thyme, and bay leaf.
  5. Bring to a boil, then reduce heat and simmer for about 30 minutes until lentils are tender.
  6. Season with salt and pepper, and stir in the chopped turkey bacon before serving.

Notes

  • For a vegetarian version, omit the turkey bacon.
