Easy Pumpkin Chili

This Easy Pumpkin Chili is the perfect comfort food for fall, featuring turkey bacon and a blend of spices that warm you up from the inside out.

  • 1 pound turkey bacon
  • 1 can pumpkin puree
  • 1 can black beans, drained and rinsed
  • 1 can diced tomatoes
  • 2 cups vegetable broth
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1 bell pepper, diced
  • 1 onion, diced
  • Salt to taste
  • Black pepper to taste

Instructions

  1. In a large pot, cook turkey bacon until crispy. Remove and set aside, leaving the drippings in the pot.
  2. Add diced onions and bell pepper to the pot and sauté until softened.
  3. Stir in the pumpkin puree, black beans, diced tomatoes, vegetable broth, and spices.
  4. Bring to a boil, then reduce heat and simmer for 20 minutes.
  5. Chop the cooked turkey bacon and stir it back into the chili.
  6. Season with salt and pepper to taste before serving.
