Indian-Inspired Breakfast Paratha

Ingredients

  • 2 cups whole wheat flour
  • 1/2 teaspoon salt
  • 1 tablespoon oil
  • 3/4 cup water
  • 1 cup mashed potatoes
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon garam masala
  • 1/4 cup chopped cilantro
  • oil for frying

Instructions

  1. Mix the flour, salt, and oil in a bowl.
  2. Gradually add water to form a dough, knead until smooth.
  3. Cover and let it rest for 30 minutes.
  4. In a separate bowl, mix mashed potatoes with spices and cilantro.
  5. Divide the dough into balls, roll each into circles.
  6. Place some potato filling on one circle, cover with another, and seal.
  7. Roll out slightly and cook on a hot skillet with oil until golden brown.
  8. Serve hot with yogurt or chutney.

Notes

  • For a spicier filling, add chopped green chilies to the potato mixture.
