Lemon Orzo With Zucchini

  • 1 cup orzo pasta
  • 1 medium zucchini, diced
  • 2 tablespoons olive oil
  • 1 clove garlic, minced
  • 1 lemon, juiced and zested
  • 1/4 cup fresh basil, chopped
  • Salt and pepper to taste

Instructions

  1. Bring a pot of salted water to a boil and cook orzo according to package instructions.
  2. In a pan, heat olive oil over medium heat and sauté garlic until fragrant.
  3. Add the diced zucchini to the pan and cook until tender.
  4. Drain the orzo and add it to the pan with zucchini.
  5. Stir in lemon juice, lemon zest, and basil. Season with salt and pepper.
