- 4 cups water
- 1 tablespoon olive oil
- 1 onion, chopped
- 2 celery stalks, chopped
- 1 bell pepper, chopped
- 3 cloves garlic, minced
- 4 slices turkey bacon, cooked and chopped
- 1 teaspoon paprika
- 1 teaspoon dried thyme
- 1 bay leaf
- salt to taste

- 2 cups cooked rice
- Rinse the red beans and soak them in water overnight.
- In a large pot, heat olive oil over medium heat. Add onions, celery, bell pepper, and garlic; sauté until soft.
- Add the soaked beans, water, turkey bacon, paprika, thyme, bay leaf, salt, and pepper. Bring to a boil.
- Reduce heat and simmer for about 1.5 to 2 hours, or until beans are tender.
- Remove the bay leaf and serve the beans over cooked rice.
