  • 4 cups water
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 celery stalks, chopped
  • 1 bell pepper, chopped
  • 3 cloves garlic, minced
  • 4 slices turkey bacon, cooked and chopped
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 1 bay leaf
  • salt to taste
  • pepper to taste
  • 2 cups cooked rice

Instructions

  1. Rinse the red beans and soak them in water overnight.
  2. In a large pot, heat olive oil over medium heat. Add onions, celery, bell pepper, and garlic; sauté until soft.
  3. Add the soaked beans, water, turkey bacon, paprika, thyme, bay leaf, salt, and pepper. Bring to a boil.
  4. Reduce heat and simmer for about 1.5 to 2 hours, or until beans are tender.
  5. Remove the bay leaf and serve the beans over cooked rice.

Notes
