One-Pan Bold Honey BBQ Chicken Rice

A delightful one-pan dish combining bold flavors and comfort, perfect for any weeknight dinner.

  • 4 pieces chicken thighs
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1/3 cup honey
  • 1/4 cup BBQ sauce
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup mixed vegetables (carrots, peas, corn)

Instructions

  1. In a large skillet, heat olive oil over medium heat. Add chicken thighs and season with garlic powder, onion powder, salt, and pepper. Brown the chicken for about 5 minutes on each side.
  2. Remove the chicken from the skillet and set aside. In the same skillet, add rice and sauté for 1-2 minutes.
  3. Pour in chicken broth, honey, and BBQ sauce; stir well. Place the browned chicken back into the skillet.
  4. Reduce heat to low, cover, and simmer for 20 minutes or until rice is cooked and chicken is tender.
  5. Add mixed vegetables in the last 5 minutes of cooking.
  6. Serve hot and enjoy!

Notes

  • For added flavor, marinate the chicken in honey BBQ sauce for a few hours before cooking.
  • Feel free to use different vegetables based on seasonal availability.
