- 4 pieces chicken thighs
- 1 cup long-grain rice
- 2 cups chicken broth
- 1/3 cup honey
- 1/4 cup BBQ sauce
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup mixed vegetables (carrots, peas, corn)
- In a large skillet, heat olive oil over medium heat. Add chicken thighs and season with garlic powder, onion powder, salt, and pepper. Brown the chicken for about 5 minutes on each side.
- Remove the chicken from the skillet and set aside. In the same skillet, add rice and sauté for 1-2 minutes.
- Pour in chicken broth, honey, and BBQ sauce; stir well. Place the browned chicken back into the skillet.
- Reduce heat to low, cover, and simmer for 20 minutes or until rice is cooked and chicken is tender.
- Add mixed vegetables in the last 5 minutes of cooking.
- Serve hot and enjoy!

- For added flavor, marinate the chicken in honey BBQ sauce for a few hours before cooking.
- Feel free to use different vegetables based on seasonal availability.
