Orzo Salad

A delicious and refreshing Orzo Salad perfect for your dinner table.

Ingredients

  • 1 cup orzo pasta
  • 2 cups cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Bring a pot of salted water to a boil and cook the orzo according to package instructions.
  2. Drain and rinse under cold water to cool.
  3. In a large bowl, combine the cooled orzo, cherry tomatoes, cucumber, red onion, parsley, and feta cheese.
  4. In a small bowl, whisk together olive oil, red wine vinegar, oregano, salt, and pepper.
  5. Pour the dressing over the salad and toss to combine.
  6. Serve chilled or at room temperature.

  • This salad can be made a day ahead of time.
