  • 1 cup granulated sugar
  • 2 large eggs
  • 2 cups all-purpose flour

  • 1/2 tsp salt
  • 1 cup crushed pineapple, drained
  • 1/2 cup brown sugar

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, cream together the butter and granulated sugar.
  3. Add the eggs, one at a time, mixing well after each addition.
  4. In another bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Fold in the crushed pineapple.
  7. In a separate small bowl, mix the brown sugar with a little butter and spread it evenly in the bottom of your cookie pan.
  8. Drop spoonfuls of the cookie batter over the brown sugar mixture.
