- 1 pound boneless, skinless chicken breasts
- 2 cups white rice
- 2 cups chicken broth
- 1 cup salsa verde
- 1 cup corn, frozen or canned
- 1 cup black beans, drained and rinsed
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- In a large skillet, heat olive oil over medium heat.
- Add the chicken and season with garlic powder, onion powder, salt, and pepper. Cook until browned.
- Stir in the rice, chicken broth, and salsa verde.
- Bring to a boil, then reduce heat to low and cover.
- Cook for about 20 minutes until the rice is tender.
- Stir in the corn and black beans, and cook for an additional 5 minutes.
