  • 1 pound boneless, skinless chicken breasts
  • 2 cups white rice
  • 2 cups chicken broth
  • 1 cup salsa verde
  • 1 cup corn, frozen or canned
  • 1 cup black beans, drained and rinsed
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. In a large skillet, heat olive oil over medium heat.
  2. Add the chicken and season with garlic powder, onion powder, salt, and pepper. Cook until browned.
  3. Stir in the rice, chicken broth, and salsa verde.
  4. Bring to a boil, then reduce heat to low and cover.
  5. Cook for about 20 minutes until the rice is tender.
  6. Stir in the corn and black beans, and cook for an additional 5 minutes.
  7. Serve hot and enjoy!
