  • 1 cup brown sugar
  • 1 cup butter, softened
  • 1 egg
  • 2 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda

  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix the pumpkin, sugars, butter, egg, and vanilla until well combined.
  3. In another bowl, whisk together the flour, baking soda, baking powder, spices, and salt.
  4. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  5. Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
  6. Bake for 12-15 minutes or until the edges are slightly golden.
  7. Let cookies cool before frosting.
  8. To make the frosting, beat together softened butter, powdered sugar, cinnamon, and milk until smooth.
  9. Spread the frosting on cooled cookies and enjoy!

Notes

  • For a thicker frosting, use less milk.
